Pumpkin Muffins
Ingredients:
2 cups SR flour
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon bicarbonate of soda
1/2 cup brown sugar
1 egg
1/2 cup milk
1/4 cup oil
1 cup mashed pumpkin
1 Mix all dry ingredients in a bowl
2 Add egg, milk, and pumpkin and mix
3. Bake in a muffin pan at 180 degrees centigrade for 20 to 25 minutes or until done. Don't overcook.
These can be made savoury with the addition a handful of grated parmesan cheese and finely chopped basil (12 leaves ) and are as sweet as the original recipe.
Experiment with different cheeses, spices and herbs.
